Looking for a super easy meal that the kids will enjoy AND it’s vegetarian? One of my go-to’s is Sheet Pan Gnocchi & Veggies. The great part about this easy recipe is that you can edit it to your family’s liking with different sauces, vegetables, meat, whatever you want!
Here is my favorite combination – it pairs great with a glass of Chardonnay.
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 1 package grape tomatoes
- Brussel Sprouts
- 1 package of shelf-stable gnocchi
- Olive Oil
- Salt & Pepper
- Parmesan Cheese
Pre-heat oven to 450°F while you prep your meal. Cut peppers and onion into 1-inch chunks and the cherry tomatoes in half. Toss all veggies, garlic, and gnocchi in olive oil, salt, and pepper. Spread mixture on a foil-lined sheet pan with the rosemary and basil on top. Leave in the oven for 18-20min. Serve with a sprinkle of parmesan cheese.
